Taste: full-bodied and full-bodied but also lively.
Scent: vanilla and berries.
Vinification: the harvests are carried out separately depending on the degree of ripeness of the individual varieties. The grapes are harvested in crates and gently pressed. After the inoculation of selected yeasts, fermentation is carried out at a controlled temperature of 28°C for approximately 10 days. The racking takes place when the analyses indicate that the correct ratio between colour and tannins has been obtained.
Maturation: the wine thus produced is aged in stainless steel barrels for approximately 24 months until bottling, in the meantime it is left to settle naturally without the use of clarifying agents or filters.
Period of consumption: up to 12 years after the harvest.
Pairings: roast red meats and mature cheeses.
