Scent: vinous and continuous
Vinification: the harvest is carried out during the first week of October. The grapes are collected in crates and gently pressed. After the inoculation of selected yeasts, fermentation is carried out at a controlled temperature of 28 C° for approximately 10 days. The racking takes place when the analyses indicate that the correct ratio between colour and tannins has been obtained.
Maturation: the wine thus produced is refined in stainless steel barrels for approximately 18 months until bottling, in the meantime it is left to settle naturally without the use of clarifying agents or filters.
Period of Consumption: up to 10 years from the harvest.
Pairings: grilled red meats or with brown sauces – game birds.
