Color: light red with cherry reflections
Taste: dry – fresh – pleasantly tannic.
Aroma: delicate with hints of ground pepper.
Vinification: harvest carried out during the last week of September exclusively from the oldest Grignolino vineyard in the company. The grapes are collected in crates and delicately pressed. After inoculation of selected yeasts, fermentation is carried out at a controlled temperature of 24°. The grapes from this 20-year-old vineyard are kept in the cellar in separate tanks until bottling. The racking takes place very early when fermentation has not yet finished to avoid the passage of too many polyphenols from the skins and seeds to the wine.
Maturation: the wine thus produced is refined in stainless steel barrels for approximately 4 months until bottling.
Consumption Period: up to 3 years after the harvest.
Pairings: white meats – cured meats – fish with fatty meat (e.g. eel – salmon)
