Taste: full and broad body, harmonious. A fresh note is perceived, characteristic of the variety, mitigated by the malolactic fermentation brought to completion.
Scent: wine with a rich and intense aroma, vinous with slight initial floral and ethereal nuances that continue with hints of red fruits, plums and cherries.
Vinification: harvest carried out during the first week of October. The grapes are collected in crates and delicately pressed. After the inoculation of selected yeasts, fermentation is carried out at a controlled temperature of 28 C° for about 10 days. The racking takes place when the analyses indicate that the correct ratio between color and tannins has been obtained.
Maturation: the wine thus produced is refined in barriques for about 30 months until bottling, in the meantime it is left to settle naturally without the use of clarifying agents or filters.
Best before: Store in a cool place, away from light for many years.
Pairings: Strong-flavored meat dishes, roasts and slow cooking. Tasty vegetables. Enhances the flavor of medium and long-aged cheeses.
