MONFERACE – Grignolino del Monferrato Casalese Reserve 2019 DOC

Grapes: 100% Grignolino
Total Alcoholic Strength: 14%
Temperatures: in summer 12-14C° / in winter 16-18C°
Color: light red with cherry reflections
Taste: dry – fresh – pleasantly tannic.
Scent: delicate with hints of ground pepper.
Vinification: harvested during the second week of September. The grapes are collected in crates and gently pressed. Fermentation is carried out at a controlled temperature of 26°C with submerged cap. Maceration lasts at least 70 days.
Maturation: the wine thus produced undergoes malolactic fermentation in steel with indigenous microflora. Racking to FML completed in tonneaux and barriques. Ageing in wood for 30 months. Filtration and bottling.
Consumption Period: long-aging wine.
Pairings: first courses of stuffed pasta or with meat or game ragù, second courses of roasted white meats, cheeses also matured
